Baked Cherry Compote

I like to have a store of these in the freezer for use with yogurt or for adding to a mix of berries.

Ingredients:
500g pitted cherries
50g caster sugar
juice of one lemon

Mix together and bake for 20 mins at 200 degrees C.
Keep in the fridge and use within 3 days.
Freezes well and the cherries keep their colour when defrosted.
