10g yeast
500g strong white flour
10g salt
40g sugar
40g butter
pinch vitamin C powder
320ml water
45 minute dough programme
Heat oven to 35 degrees c
Divide dough into 75g pieces and roll into balls.
Place on trays with baking parchment
Prove for 30 mins.
Flatten them down.
Prove for another hour
Heat oven to 210 degrees c
Bake a tray at a time on the centre shelf for no more than 10 minutes.
Cool on a rack.
