Pão de Queijo 

A big thanks to Vânia Tavares for this special recipe from Brazil, the quantities are reduced to make just 20 little buns

250g tapioca flour
60ml water
60ml oil
120ml of milk
1 egg – beaten
75g parmesan cheese
1/4 teaspoon salt

Prepare the Tapioca Flour:
Place the tapioca flour in a bowl and pour the water over it.
Mix with your hands until the lumps that form break up.
Heat the Liquids
In a pan, heat the oil and milk until boiling. – When it boils, carefully pour this mixture over the tapioca flour.
Cool the Dough
Let it cool a little so you can stir it.
Grate the Cheese
While the dough is cooling, grate the Parmesan cheese.
Mix the Ingredients
Once the dough has cooled enough, add the egg, grated cheese and salt to taste.
Mix well until you get a homogeneous dough.
Shape the Cheese Breads
Grease your hands with a little oil and shape the cheese breads into golf balls
Bake
Place the cheese breads on a baking sheet.
Bake in a preheated oven at 180°C for about 40 minutes, or until golden brown
