The only drawback is that it looks shop bought!
100g butter
200g sugar
1 teaspoon vanilla extract
125g plain flour
50g cornstarch
1 1/2 teaspoons baking powder
60 ml milk
2 eggs
Cream together the butter, sugar, mace and vanilla.
Sift together flour, cornstarch and baking powder.
Beat eggs and milk together.
Add dry ingredients alternately with eggs and milk.
Grease and flour a fluted silicone mold.
Add the batter and bake for 45 mins at 180 C or until the centre feels springy.
Cool in the mold for 20 mins then turn onto a cooling rack.
Turn right side up.
Topping:
Spread with creme fraiche and fruit of your choice, my favourite is mixed berry compote.
