makes 4 jars
750g chopped green tomatoes
600g chopped tomatillos
200g raisins
200g chopped onion
450g sugar
500 ml cider vinegar
1/2 teaspoon salt
1/2 teaspoon sichuan pepper – crushed
1/2 teaspoon ground ginger
1 teaspoon ground coriander
2 chilli peppers, finely chopped
Combine all ingredients in a large pot. Simmer until the vinegar has been absorbed and the chutney has reach the desired consistency, this may take 1 – 2 hours. Spoon into hot sterilised jars and seal immediately.
