1 tbsp oil
1 large onion, roughly chopped
1 garlic clove, chopped
1 x 400g can chopped tomatoes
½ tsp mixed dried herbs
2 tsp sugar
salt and freshly ground black pepper
crème fraiche
Heat the oil in a large saucepan and gently fry the onion and garlic for 5 minutes until they begin to soften.
Stir in the tomatoes, then refill the can half full with water and pour it into the pan.
Add the herbs, sugar, salt and pepper.
Bring to a gentle simmer and cook for 15 minutes, stirring occasionally.
Remove from the heat and blend with a stick blender until smooth.
Serve with a swirl of crème fraiche.
