Marmalade

Don’t make more than this quantity at once.

1.5 kg fruit
1.5 litres water
3 kg ? sugar

Method :
Cut fruit in half, remove and discard seeds. Cut fruit into quarters, then cut quarters into slices. Combine fruit with the water in large bowl; cover, refrigerate overnight.
Transfer fruit mixture to large saucepan; bring to a boil. Reduce heat; simmer for about 45 minutes or until fruit is soft. Measure fruit mixture, allow 1 cup (200g) sugar to each cup of fruit mixture. Return fruit mixture with sugar to pan; stir over heat, without boiling, until sugar dissolves. Boil, uncovered, stirring occasionally, about 40 minutes or until marmalade jells when tested. Pour hot marmalade into hot sterilized jars; seal while hot.
Makes about 9 or 10 jars
