makes 4 jars
Ingredients :
2 kg cherries, stones removed and roughly chopped in half.
500g onion chopped
zest and flesh of 2 small oranges
25g piece ginger, grated
200g sugar
250ml cider vinegar
1 tblsp ground allspice
1tsp freshly-ground black pepper
1/2 tsp chilli
1 tblsp coarse seasalt
Combine all the ingredients, except the cherries, in a large pan and bring to the boil.
Add the cherries and boil gently, uncovered, stirring frequently until thickened, for about an hour.
Pour into sterilized jars and seal.
Leave for 3 months before using.
