Cheese Straws

Ingredients:
115 g butter (no substitutes), softened
65 g grated Parmesan cheese
125 g all-purpose flour
pinch salt
pinch cayenne pepper
milk to brush

In a small mixing bowl, beat butter and Parmesan cheese until well blended. Add the flour, salt and cayenne; mix well. Divide dough in half.
On a lightly floured surface; roll each portion into an 45cm x 7cm rectangle. Cut into 7cm x 1.5cm strips.
Place slightly apart on lightly greased baking sheets; brush with milk and sprinkle with a little grated parmesan.
Bake at 180 degrees C for 8-10 minutes or until lightly browned.
Remove to wire racks to cool. Store in an airtight container.
