Bread Pudding

Waste not, want not!


serves 4
Ingredients:
250g stale bread, crusts removed
275ml milk
50g butter, melted
75g brown sugar
2 teaspoons mixed spice
1 egg, beaten
175g mixed dried fruit
grated nutmeg

Tear the bread into small chunks, place in a large bowl and pour over the milk. Leave to soak for about 30 minutes.
Add the melted butter, sugar, egg and mixed spice.
Use a fork to mix together and beat out the lumps and then stir in the dried fruit.
Butter a 1.5 litre baking dish and pour in the mix.
Grate some nutmeg over the surface.
Bake at 180 degrees C for about 1 1/4 hours.
Serve hot or cold.
