Tastier than shop bought. Makes 36 biscuits
125g wholemeal flour
125g plain white flour
250g medium oatmeal
125g sugar
1 1/4 teaspoon bicarb of soda
1 1/4 teaspoon salt
185g cold butter, diced or grated
2 eggs, beaten
2 – tablespoons milk
Preheat the oven to 190c and line baking trays with baking parchment.
Put all the ingredients except the egg and milk into a food processor and whizz together until it resembles fine breadcrumbs. If you don’t have a food processor then use a large bowl and rub the butter into the dry ingredients (like making pastry)
Add enough egg to bring the dough together without being too wet. If it seems too dry then add a splash of milk.
Roll the dough out on a lightly floured surface until 3mm thick.
Cut out the biscuits, arrange spaced apart on the baking trays and prick over with a fork.
Bake for 15 – 20 minutes until golden.
Cool on the trays for 5 minutes before transferring to a rack to crisp up.
I divide the dough into 3, putting 2 lots into the freezer to bake at a later date.
