Gateau Breton

A rich biscuity cakey slice of loveliness – great with a cup of tea

5 Egg Yolks

400g Flour

210g Salted Butter

160g Sugar

Jam and / or Marzipan for filling

Preheat oven to 230 ºC

Mix flour and sugar then work in the egg yolks
add the softened butter and knead into a smooth paste

Butter the tin (a cake tin with removable base is a good idea)

Divide the mix in two and press the first half in the cake tin, brush in a good layer of jam leaving 2cms border at the edges, Cover with the rest of the paste

Brush the top with milk, streak with a fork and add a dusting of sugar

Put the cake in the oven and lower the temp to 190 ºC, it will take around 1hr 30
