One cooking pot, quick and easy.
2 tablespoons olive oil
2 large onions chopped into wedges
2 red peppers, deseeded and roughly chopped
2 carrots, chopped into chunks
2 garlic cloves, chopped
fresh thyme
tin of white beans or chickpeas
sausages – pricked with a fork
small tin of chopped tomatoes
100ml white wine or cider
Preheat oven to 220c
Put everything except the beans, wine and tomatoes in a large roasting pan, making sure that everything is coated in the olive oil.
Place the sausages on the top, season well and cook for about half an hour.
Add the beans, wine and tomatoes and replace the sausages to the top.
Cook for a further 20 minutes until the sausages are browned.
