Roast Pork with Lemon and Spices

1.2 kg rolled joint of pork
1 teaspoon fennel seed
1 teaspoon coriander seed
1 teaspoon salt
1/2 teaspoon black pepper
zest of 1 lemon
2 cloves garlic
glug of olive oil

Put the spice ingredients into a pestle and mortar with the olive oil and make a paste.
Rub into the pork.
Place in a preheated oven 160 C and cook for 2 hours 10 mins.
For smaller joints – 700g, cook for 1 hour 30 mins
