Corn Tortillas

Classic corn Tortilla made with a press – a tasty alternative to wheat flour, fill with whatever you feel like

4 measures of PAN cornflour

5 measures hot tap water

Pinch of salt

Mix together to form a stiff dough then leave for 30 mins
Prepare the press (I made mine from scraps of wood) you will also need two squares of plastic ziplock bag
Heat cast iron pan or plancha – squish golf ball size balls of dough in the press and peel from the plastic, slide them into the pan, flip frequently and press them down occasionally

Put finished Tortillas in a bowl with a damp tea towel – Either use straight away or fry them up later with some fillings like salsa, cheese, beans etc
