A light and refreshing soft drink
20 elderflower heads
2 sliced lemons
2 tsp of citric acid
1 kg sugar
1.5 litres boiling water
Dissolve the sugar in boiling water and leave to cool.
Add all the other ingredients.
Leave for 48 hours.
Strain though a fine sieve or through a muslin cloth and decant into sterile screw topped bottles.
Refrigerate or freeze to keep for longer.
Dilute with 5 parts fizzy water to serve
