A tasty way to use left over roast meat
360 g cooked meat, minced
2 slices bread, crusts cut off, made into bread crumbs
1 small onion diced and sautéed
1 medium egg beaten
1 tablespoon chopped parsley
lemon juice – 1 squeeze
1 clove garlic crushed
salt and pepper
sunflower oil
Mix the meat with all the other ingredients except the oil. Season with salt and pepper.
Form into 6 patties then leave in the fridge to firm up.
Fry in the oil over a medium heat for 5-10 minutes a side until golden brown and heated through.
