Great with curry or crisped under the grill for a tasty snack. Makes 6
Ingredients:
100g gram (chickpea) flour
200 ml iced water
1/2 tsp salt
1/2 tsp cayenne pepper
1 tsp roasted cumin seed
2 tbsp chopped coriander
oil for frying
Sieve the flour into a bowl and all remaining ingredients.
Whisk to a smooth batter.
Heat a teaspoon of oil in a frying pan and when very hot add a tablespoon of batter.
Swirl the batter around the pan to make a thin pancake.
Cook for a couple of minutes until the surface has dried out.
Flip it over and cook for another minute.
Make a load and freeze some for later use.
Reheat under a hot grill.
