Such a quick and easy recipe and a good way of using up a surplus of windfalls.
Ingredients:
125g self raising flour
1/2 teaspoon baking powder
1 teaspoon powdered cinnamon
100g sugar
250g apple sauce*
75g butter, melted
1 egg
Put everything into a bowl and mix well.
Pour into an 18 cm diameter cake tin lined with greaseproof paper.
Bake for 40 – 45 minutes.

Apple Sauce
Ingredients:
250g Bramley or Granny Smith apple – chopped into small chunks
10g caster sugar
1 tablespoon water.
Put everything into a pan with a tight fitting lid.
Stew for around 15 minutes over a gentle heat.
This keeps well in the freezer, so make loads when the windfalls need using up.
