140g butter
100g sugar
200g plain flour
1 egg, beaten
grated zest of half a lemon
pinch of cinnamon
jam
thinly sliced apple – optional
Beat the butter and sugar together then stir in the flour, lemon and cinnamon.
Add the egg and mix to form a pastry.
Leave to rest in the fridge for half an hour.
Line a tart tin with the pastry (save a bit for the top decoration) by pressing it into the base and up the sides using your fingers.
Spread over a layer of jam (followed by the slices of apple if using)
Make a lattice work decoration with thin rolls of pastry for the top.
Fold down the edges of the tart to seal in the jam and lattice decoration.
Bake for about 20 minutes at 180 C
