Also works well with pork cheek
1/2 cup soy sauce
1/2 cup brown sugar
1/2 cup port or sherry
1 tsp. Chinese five spice
1 tsp. ground black pepper
1 whole chilli slit down the middle.
few bits of fresh ginger
Couple of star anise
Pork ribs
Place the ribs in a roasting tin.
Mix all the ingredients together and pour over the ribs.
Cover with foil to seal in the steam.
Bake at 150°C for at least 2 hours, preferably 3 hours to get really tender meat.
Uncover and roast for a further 20 minutes, turning the ribs after 10 minutes to colour and crisp up.
You can also leave the ribs as a rack and finish them off on a barbecue for an extra yummy way to feed loads cheaply
