Pear, Peach and Lemon Chutney

Lots of chopping but worth it!

12 hard pears, peeled, cored & chopped
2 tomatoes, peeled and chopped
3 x apples, cored and chopped
3 x peaches, peeled and chopped
2 x lemons, seeded and chopped
200g raisins
1 teaspoon dried chilli
1 x clove garlic, minced
500 ml cider vinegar
600g brown sugar
1 chunk crystallised ginger, finely chopped
1 tsp ground cinnamon
1/4 tsp ground allspice
1 tsp ground cloves
1/4 tsp ground nutmeg
1/4 tsp cardamon seeds
1 tablespoon salt

Takes about 90 mins to prep.
Combine all ingredients in a large pot. Simmer until the vinegar has been absorbed and the chutney has reach the desired consistency, about an hour. Spoon into hot sterilised jars and seal immediately.
