{"id":911,"date":"2020-03-28T14:19:34","date_gmt":"2020-03-28T14:19:34","guid":{"rendered":"http:\/\/recipes.maisonamaureillas.com\/?p=911"},"modified":"2020-03-28T14:19:34","modified_gmt":"2020-03-28T14:19:34","slug":"duck-breast","status":"publish","type":"post","link":"https:\/\/recipes.maisonamaureillas.com\/?p=911","title":{"rendered":"Duck Breast"},"content":{"rendered":"\n<p>1 duck breast<br>\n2 shallots, finely chopped<br>\n1 clove garlic, finely chopped<br>\npinch of fresh thyme, finely chopped<br>\n2 tbsp balsamic vinegar<br>\n1\/4 glass of red wine<br>\n30g butter<br>\n55g redcurrants (or 3 tbsp redcurrant jelly)<\/p>\n\n\n\n<p>Slash the fat on the duck breast and then put into a cold frying pan.<br>\nCook over a low heat until the fat has rendered out and the skin is crispy.<br>\n Remove it from the pan and place in the oven at 180C for 12 minutes.<br>\n Meanwhile, drain off most of the fat from the frying pan. Put in the shallots, garlic and thyme  and cook for a minute or two. <br>\nDeglaze the pan with the balsamic vinegar and red wine. Add the butter and redcurrants and reduce the sauce for a couple of minutes.<br>\n Remove the duck from the oven to rest, then slice on the diagonal.
