{"id":864,"date":"2020-03-27T11:05:10","date_gmt":"2020-03-27T11:05:10","guid":{"rendered":"http:\/\/recipes.maisonamaureillas.com\/?p=864"},"modified":"2020-03-27T11:05:10","modified_gmt":"2020-03-27T11:05:10","slug":"olive-oil-roasted-chicken","status":"publish","type":"post","link":"https:\/\/recipes.maisonamaureillas.com\/?p=864","title":{"rendered":"Olive Oil Roasted Chicken"},"content":{"rendered":"\n<p><br> A whole meal in one pan<\/p>\n\n\n\n<p><br> <br> Ingredients:<br> 1.5 kg free range chicken <br> olive oil<br> 1\/2 lemon<br> sprig fresh thyme<br> aubergines, peppers, onions, pumpkin etc.<br> unpeeled garlic cloves.<\/p>\n\n\n\n<p>Preheat the oven to 200c<br>\nRub the chicken with olive oil and season with pepper.<br>\nPlace the half lemon and thyme inside the bird.<br>\nPut the chicken breast side down in a large roasting tin and roast for 30 minutes.<br>\nTake the roasting pan out of the oven, turn the chicken right side up.<br>\nSeason with salt and baste with the juices in the pan.<br>\nReturn to the oven for another 30 minutes.<br>\nAgain, take the roasting pan out of the oven, add the veggies, drizzle over more oil and baste the bird.<br>\nAfter another 30 minutes check that the chicken is cooked by pushing the tip of a sharp knife between the thigh and breast. if the juices run clear, it is ready.<br>\nLeave to rest for 10 minutes before carving.<br>\nLeave the veggies in the oven for those 10 minutes to get a bit of extra colour. <\/p>\n","protected":false},"excerpt":{"rendered":"<p>A whole meal in one pan Ingredients: 1.5 kg free range chicken olive oil 1\/2 lemon sprig fresh thyme aubergines, peppers, onions, pumpkin etc. unpeeled garlic cloves.
